National cliche alert!
When I was working for a week in Ireland last year I stayed in a golf course club house. I had a roast dinner one evening which came with chips, mash, roast, dauphinois and boiled potatoes!
The bar man couldn’t understand why I thought that was amusing.

I like them all most all ways
Fried (with ketchup or mayo sauce), Scalloped ( lots of cheese), mashed (milk, butter, light salt), baked(love it with sour cream ) , chips, roasted (prefer new potatos for roasted but I've BBQ a baked potato or even throw them in a campfire)

As I'm one who prefers variety I can't choose one way over the other. Not a big fan of the thick chips people are raving about though. Give me the thin "frites" every time especially served with mussels or a good burger.
One of my frequent ways to boil potatoes is to toss them in truffeled butter after draining the water. I don't eat a lot of mash potatoes as the texture is my least favorite when it comes to potatoes but the other night I had some at a restaurant that were whipped with a house made goat cheese and a vegetable stew on top, delicious.
This time of year is prime potato season and I buy fingerlings (my fave) from a grower up in Placerville. They are usually freshly dug so they are sweet and tasty any way you cook them. This morning I sliced some real thin and cooked them after cooking up some bacon and then poured some beaten eggs over them when they were done. A hearty breakfast indeed.

I like all potato preparations. Favorite:
1/ boil potatoes 5 minuties too short. Put a load of olive oil in soup boel. Spice with paptika powder/ salt/ garlic/ pepper. Drain potators. Let them cool a bit. Back in pan, trow the spices olive oil in pan. Toss it untill all potatoescovered. In oven en roast.

I don’t eat them often, maybe once a week and it’s either in a curry or roasted. I love roasties but not fussed about chips.

That's right, I never saw thme there, either. And yet they love both fish and fast food. Perhaps fish'n'chips just never traveled well? Can't think of any chain restos.

It's not easy to get it right and many places do it badly. There's a few places in Hong Kong that do do it well and it's quite popluar here with both ex-pats and locals (the colonial influence)

Does anyone remember that roast potatoes at school dinners were always a sort of odd consistency? Very much like boiled spuds with very thin skin and a very uniform shape.
