I probably wouldn’t punctuate ”Love Jimbo” at all as it’s a shortened way of saying ”Love from Jimbo”, but otherwise it’s a comma for all of them.

A dash works with Joe Smith but it depends a bit on what you’re trying to say, I think. Compare:

Joe Smith, a mechanic, told me to buy a new car, as this one’s on its last legs.

Yeah, I’m fond of this car, but Joe Smith - who’s a mechanic - told me to buy a new one.

I see your point and as I played around with dashes in place of commas I can see how there'd be some clumsiness. But why the comma between "car" and "as"? Not that a dash would help. I might put a comma, too, then remove it, then put it back. And why did I separate "too" with commas?

The comma is used to signify a pause - I think one would naturally have a little pause at that point in the sentence. Otherwise it gets a bit long and unwieldy with all the different clauses.

In this case, the comma is to separate a non-defining clause. I.e. you can stop the sentence at the word, 'car', and it still makes perfect sense.
