I voted Footy. Honest.
He's led an interesting life and I wish I'd have been him when he sat there in a small London park changing t-shirts and that man gave him half a bottle of wine. Wonderful.
In other news I have gone for brain surgeon so I could lobotomize the population of a small but rich African country and thus become their president.

None of those.
My three - and it's a toss-up~
Actor
Singer
Dancer
I would like to be proficient and respected at any or all of those, but NOT famous.
And I really like G's idea of Travel Writer, despite the air travel involved. The History, the scenery, the food.....yep, sweet gig.

Comic artist, sitting alone at my drawing board... They say that comic artists are frustrated filmmakers, well, you could turn that aorund and say filmmakers make films because they can't draw - and lose their shirt in the process.

None of those listed...
Acting: I loved school productions and joined an amateur group when I started work. I sometimes wish I'd dropped out of work and tried to go to drama school, but I know for most the profession is an uncertain one.
Music: I started playing in bands (alright, we were a synthpop duo) in 1981... again I sometimes think I ought to have worked harder on that ambition, but other stuff seemed more important (girls & relationships). To succeed in the arts you need to put 'normal life' aside, I think.
Luthier: it would be cool to build guitars for people who can play them much better than I (which is, to be frank, quite a lot of people). It also feels like the sort of manual labour I could manage.

I voted for airline pilot.
I would have made a really good doctor I think but I was not scholarly enough to even pass 10th grade biology.

Re: Which professions would you have liked to do
A limit of three is a bit unfair. I actually have more than three job titles listed on my work email signature!
From the list marine biologist was my first pick. There was a period when I was around 13 when I thought that was my dream job. I always thought sea creatures were pretty cool.
Being President of a small but resource-rich African country seems like a bit of a Faustian bargain. It'd be fun for a couple of years but then you'd get overthrown and end up rotting in prison somewhere. Likewise restaurant owner: you might get to eat some great food but everything I've heard about the restaurant business suggests it's a 24/7 job.
I could get with being a tour guide. That was something I looked into when I moved abroad. It's a bit like teaching combined with sightseeing. You might get bored of it after a while, though.
I could be an architect, too. I was good at Maths at school and I like going into the shops in art museums and pretending to be the kind of person who buys magazines about architecture.

Too late in life, I finally decided that I would have loved to be a high school geography teacher. Surprised the daylight out of me.
