With a surfeit of leftover veggies from our Thanksgiving party (early, I know) I made a scrambled egg Pam hash with cabbage, onion, celery and mini tomatoes.

A bowl of sweet granola. Then a bowl of low-fat yogurt with cut up banana and a squirt of honey. Then the toasted end piece of a frozen fig bread with butter. (Damn my wife for leaving out the butter so it is soft and easy to eat!) And I wonder why I am gaining weight. :oops:

There is this old granola I hardly ever eat. It just sits there on the shelf in it's funky organic-y mason jar. While its got some raisins and coconut flakes in there it's boring, pretty much uncooked oatmeal with no snap or crunch. But, dear breakfasteers, what I do from time to time is cook it ... in water. Then I add sugar, cinnamon and milk. Not a bad breakfast.

Polenta with toasted pecans, diced apple and bourbon barrel aged maple syrup. I usually use banana instead of apple but as it was a spur of the moment decision I used what I had. A fuyu persimmon would have probably worked as well. Maybe next time.
