I buy my corn from a local grower who picks it in the morning before the market so it's about as fresh as it gets unless you grow your own. At 50 cents a piece it is a great deal. I only buy it from him so after corn season is over I don't bother until the following summer. It's as sweet as candy. Sometimes I remove it from the cob and make a salad with peppers, cherry tomatoes, scallions and a balsamic vinaigrette but most of the time I shuck it and eat it raw. Cooking doesn't improve it unless you want it warm. If one wants to go the extra mile coat the corn with Cotija cheese, sprinkle with chili pepper and a squeeze of lime. Heaven.

Slathered with butter then wrapped in foil then shoved into the barbecue coals --- nuthin' better.
