You see, this is where UK and the US differs.

No-one in their right mind would EVER call their establishment after themselves in the UK, unless it's a greasy spoon cafe. So "Kev's Cafe" is about as far it goes. Calling your bar "Dave's" or "Cathy's" is just NOT ON.

Actually, I'd like a long bar: a New York style bar. Not a restaurant but some bar food. Good music and no TVs.

This fits in with my plan to scandalize/excite uptight Britishers by opening up a law office with bombastic, American Style commercials where I holler about demanding the justice you deserve.

I’ll have to expand my empire to include Yee-Haw Mike’s Howdy Corral! Or some such.

We always laugh at those signs when we rent cars at Enterprise in the UK because the process of renting a car in the UK is such a COLOSSAL PAIN IN THE ASS compared to doing it in the US.

I've spent many hours thinking about what it would be like to run a bar or a restaurant, and I've mostly come to the conclusion that it would be a whole lot of work for very little payoff. I still quite often contemplate the idea, but unless I had an incredibly solid business plan worked out ahead of time, I wouldn't do it, as tempting as it seems. My bandmate opened his bar 15 years ago with his wife and the place has been an absolute success. It's tiny - only holds about 35 people - and one person can run it at any given time so the overhead is barely worth mentioning. He's since opened two other places - both restaurants - that also do very well, so he remains a constant source of inspiration for me.

Anyway, one restaurant idea that sticks in my head is a single-table place that would have maybe three seatings per night. The table would seat four, and they would get whatever I felt like making that day. I have no idea what I'd call it but it would be in an off-the-beaten-path location. Totally hipster, I know, but who cares.

I think I'd rather open a bar, though, but to be honest, Toronto has no shortage of bars so I'd have to think about going elsewhere. I've often thought about opening a place in my hometown, to try to help out the downtown area that was decimated after fucking Walmart moved in over a decade ago, but then I'd have to move back to my hometown, and that ain't happening. No idea what I'd call it, either.

If I ever do open a place, you're all invited, and I'll buy you each a tequila or four.

I have a fair amount of friends in the business. One of my oldest friends, after spending lots of time in the hospitality business in San Francisco (Anchor Steam Brewery and the 21st Amendment in San Francisco), he opened his own restaurant and place in Sacramento. He now has two and the food has been featured in Diners, Drive-Ins and Dives on the Food Network.

His original place, which he bought with a friend when they were in their 20s, was named Rosie's Bar & Grill. I painted a picture of the three of them on the front, Julio, Carlos, and Matt, all holding a giant burger and the guys at the ends holding mugs of beer.

I have another fairly good friend who owns two places. One, called the Office, which is casual bar and grill. He used to be in real estate.
