Clearly 'Godfather II' is the stand out. He's very good in the others too but is playing characters who aren't as central to the film.

Yes, that's the one. The scene where he confronts Michael, complaining how he is always asked to do minor tasks: "I'm smart!"

Another good one: "Michael, you don't talk to Moe Green like that!"

He’s more central in Dog Day Afternoon - which I meant to vote for. I accidentally voted for Deer Hunter, but he’s pretty great there too.

I thought he was passive in DDA, as he was meant to be. He was the reason for the whole situation, but it was Pacino who provided the narrative drive.

The Godfather II is the obvious answer and for good reason, but I voted for The Conversation. That’s one of Coppola’s finest works as well in my book.
