You really only think they're so so? Six great albums with Ozzy and two good ones with Dio.

actually I sometimes think if they were even MORE simple/brutal, they'd be better.

And they could play a bit faster and they'd be the Stooges. There's actually quite a lot of subtlety in the early Black Sabbath albums, especially in the rhythm section. They only painted with black but they used different shades of black.

There's some fabulous interplay in various songs - and humour too. It wasn't all death & destruction.

There is loads of colour in those Ozzy era albums.
Jazzbo wankery, piano ballads, woozy lysergic soundscapes, musique concrete, acoustic guitar interludes....
Their stock in trade of course, was None-More-Black.
But even that is leavened with McCartneyesque basslines and funky drummery
